Edmundo Kelley Mendoza (or just Mundo!) is the heart and mind behind MAS CHILE. Born and raised in Santa Fe, a first generation Mexican American, Mundo has aspired to be a chef from the time he could first hold a spoon. He grew up on traditional Mexican food: fresh tortillas, red chile, beans, rice, ceviche, enchiladas. His mother, Florinda, was his first teacher and remains his most important inspiration in the kitchen. At her table he learned that food brings people together, that the best recipes are passed down not written down, and of course you can never go wrong with mas chile.
Mundo has worked in the Santa Fe food and hospitality industry for over ten years. He is kitchen taught, mastering every skill on the job from line cook to bar manager. During the height of the covid-crisis, Mundo began writing his love letter to New Mexico and Chile in the form of this food truck. With this new venture Mundo is excited to share his passion for food and family with you and yours. Mas Chile por todo el mundo!
